Sweet Summer Tea

The other day I was half asleep watching Food Network and heard this recipe for iced tea.  I LOVE iced tea. I especially crave it when pregnant, of course I go the decaf route for the most part.  I went to the store last night JUST to get the stuff to make this tea.  It is so light, fruity, and a little sweet.  Delish.  I can see myself making many variations and sipping on this all summer long. Plus, it's super easy to make.

Ingredients
1 Orange
2 to 3 Plums (my local produce stop didn't have plums that were ripe, so I used 3 nectarines instead)
8 tea bags (I always use Lipton for my iced tea)
1/2 cup sugar
1 Lemon

Directions
Fill pitcher with 8 cups (2 quarts) cold water
Quarter orange, squeeze juice into pitcher and toss in peels
Pit and cut plums into wedges, drop into pitcher
Add tea bags to pitcher, mix
Let tea steep in refrigerator for 8 hours or overnight, stir occasionally (I didn't stir since I was sleeping)

When ready, remove orange peels and tea bags.  Add in sugar and stir until dissolved. Cut lemon in half and squeeze juice from 1 half into tea. Slice the other half into rounds and add to tea (I skipped this step because I used the other half the night before for my asparagus). Stir and serve over ice.

So easy...no boiling water or anything! Just throw it in the fridge. As I mentioned, I had to substitute nectarines for plums and it was a success!  I was thinking of also trying pears, peaches, raspberries, any fruit really.

It's actually sunny here today, after a long string of rainy days, so we are out enjoying the sunshine. There's nothing more G loves than running around outside.  Less than a month for our first beach vacation of the summer and I can't wait. G is very much a beach bum just like his mama :o) (A few pictures from last summer)




PS- Can someone tell me why every picture I upload to Blogger is so grainy? I never had this problem before they did all that maintenance stuff a few weeks ago. It's really getting on my nerves.

  2. Your iced tea sounds delicious! I might have to try that. I have a serious addiction to Arizona iced green tea. Once the weather warms up about May, it's about all I drink until the weather starts getting cool again. I buy the powder and mix it myself.

    Don't know what the cause of the grainy pics is, but I noticed that the other day. They seemed to be better today though.

  5. Love tea in the summahtime and now it's just about time - will try this for sure! As for your photos.....when I had Blogger I was never happy with the quality so I find that by loading to Photobucket or Flickr and then copying and pasting the URL in to my post they came out much more clear and true to the original.
